2 cups flour
1 1/2cup sugar
3 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
7 large eggs
3/4 cup canned pumpkin
1/2 cup oil
1/2 cup water
1/2 tsp cream of tartar

Directions:
Directions:
Sift dry ingredients in a bowl; separate eggs; set aside whites; In a small bowl combine yolks with pumpkin, oil and water; Make a well in centre of dry ingredients; add all liquid at once; Blend until smooth. Beat whites with beater until foam; add cream of tartar. Beat 3-5 minutes until stiff. Fold into pumpkin batter. Turn into ungreased 10 " tube (angel food cake pan), Bake in a moderately slow pre-heated oven 325F for 55 minutes. Raise temp to 350 and bake 15 minutes longer. Remove from oven and invert pan onto cake rack at once. Let stand til cool. Frost with maple walnut frosting

Frosting: Cream 1/4 cup butter. gradually add 1/2 lb sifted confectioners sugar, cream until light and fluffy. Blend in 1/3 cup condensed milk, then another 1/2 lb sifted confectioners sugar til frosting is spreadable. Stir in 1/2 tsp maple flavouring. Spread on cake and cover with 1 1/2cup chopped walnuts.
