1 qt heavy cream
3 lb. bittersweet chocolate
3½ oz butter

Directions:
Directions:
1. Place chopped chocolate in a large bowl.

2. Bring heavy cream to a boil - don't stir.

3. Carefully remove cream from the stove and pour over chocolate.

4. Let sit for a few minutes and then whisk until chocolate is completely combined with heavy cream.

5. Whisk in butter.

6. Let cool until it appears a little thick.
