Pineapple Cookies Recipe

1/2 Cup shortening (Butter flavored Crisco
1 Cup brown sugar
1 egg, slightly beaten
3/4 Cup raisins
1/2 Cup crushed pineapple ( use a small can and drain juice)
2 C flour
1 tsp baking powder
1//4 tsp.baking soda
1/4 tsp salt

Directions:
Directions:
Cream shortening and sugar in a large mixing bowl.

Add slightly beaten egg. Blend well.

Combine all dry ingredients and gradually mixing them into to wet ingredients until well combined.

Drop on a greased cookies sheet by tablespoons.

Bake at 375 for 10 minutes or until bottom edges are slightly browned.

Makes about 2 dozen cookies.

Personal favorite of mine. WhenI used this recipe in the classroom, the students were skeptical. But of all the six recipes were made that day, it was the one bowl the students set on my desk between baking sheets stating that the dough was so good, they couldn't stop eating it!l
