1 medium size onion
3/4 c. olive or vegetable oil
1 large egg
1 Tbsp. lemon juice
1/2 tsp. dry mustard
1/2 tsp. salt or salt to taste

Directions:
Quarter onion. Pour oil over onion, cover and let set for 2-3 hours. Put egg, lemon juice, salt and mustard in blender. Add 2 tablespoons of oil very slowly while blender is at its lowers speed. Remove onion and pour rest of oil in a stead stream into blender. Blend for 2 minutes. Makes 1 cup. Onions can later be used in stir fry vegetables.
