5 pounds hamburger (use cheaper meat)
4 Tablespoon curing salt (Morton's Tender Quick)
2½ teaspoons liquid smoke
1 teaspoon garlic powder (not salt)
2½ teaspoons course pepper
2½ teaspoons mustard seed

Directions:
Directions:
Knead all ingredients together. Put in refrigerator in covered bowl. Everyday, knead for five minutes. Cover and leave at room temperature for about 1 hour. Put back in refrigerator. On fourth day, knead and form into 2 or 4 rolls. Bake 9 hours at 160º.

Bake on a rack so grease drops off. A broiler pan works nicely. For summer sausage, omit garlic powder. When you remove from oven, drain on paper towels while cooling.
