1 cups sugar
1 tsp baking soda
1 tsp cinnamon
1 cup cooking oil
1 cup chopped walnuts
9 oz butterscotch morsels
2 1/2 cups flour
1 tsp salt
2 tsp baking powder
2 eggs
4 cups chopped apples (Granny Smith)

Directions:
Directions:
Spray and lightly flour a 9 x 13 inch pan. Mix all dry ingredients together. Add oil and eggs. (Mixture will be very stiff) Stir in apples and nuts. Pour in pan and spread evenly. Sprinkle butterscotch morsels on top.

Bake at 350 degrees for approximately 1-11/4 hours until nicely brown and toothpick comes out clean.

***Depending on your oven you may need to start checking cake in 1 hour.
