1 1/2 tbsp cornstarch
2 tbsp soy sauce
1/2 lb. pork (or double above 2 ingredients for 1 lb. pork)
2 squares medium-firm tofu, cut into cubes
1 leek or 3 green onions, chopped
1/4 tsp salt
1 tsp Chinese salted black bean, or to taste (use more if using paste version)
1 tbsp chili bean paste, or sriracha sauce, to taste
3 tbsp chicken broth
1 tbsp cornstarch
2 tbsp water
2 tbsp light soy sauce
2 - 3 tbsp oil for stir frying, as needed
cilantro (optional)

Directions:

1. Mix 1 1/2 tbsp cornstarch with 2 tbsp soy sauce. Add to pork and marinade at least 30 minutes ahead.
2. Chop leeks and/or green onion
3. Heat oil in wok. Add marinated pork and stir fry until almost cooked.
4. Add salt and stir. Add black bean and stir until well blended.
5. Add chili, then chicken stock, bean curd, and stir until well mixed
6. Make slurry with remaining cornstarch and soy sauce, and add to wok and gently stir until thickened
7. Add green onion/leeks and cilantro at very end, just before serving
8. Serve on top of rice

Comfort dish. Use Swanson chicken broth and increase it and slurry if you want dish to be more saucy. If you used dried black bean, make sure you really mash it down by using some kind of pestle.
