12oz Yukon Gold Potatoes
6ox Green Beans
1 Shallot
12oz Chicken Breast
Thyme
5tsp Balsamic Vinegar
2tbsp Apricot Jam
1 Chicken Stock Concentrate
5tsp Olive Oil
1tbsp Butter
Salt
Pepper

Directions:
Preheat oven to 425º adjust rack to top postition. Dice potatoes and place on baking sheet with a drizzle of olive oil and a pinch of salt and pepper. Roast for about 10 min. Prepare green beans, once potatoes have roasted moves potatoes to one side and place green beans on the other with oil, salt,pepper roast for 12-15 min.

Mince half the shallot.(4 servings use all)

Season chicken with salt and pepper. Heat oil and place in pan cook until browned. Set chicken aside to rest. Wipe out pan.

Add shallot, thyme sprigs, drizzle of olive oil to pan. Cook until shallot is softened. Stir in jam and 1tbsp vinegar let simmer until syrupy. Stir in stock concentrate and ¼c water until thickened. Stir in 1tbsp butter until melted. Add a splash of water if to thick.
