3 - 4 pounds chicken breast
cup diced celery
1 cup diced carrots
1 tablespoon salt
3 cups boiling water
3 tablespoons butter
cup chopped onion
1 - 2 teaspoons curry powder
3 tablespoons flour
2 cups chicken broth
cup evaporated milk
3 cups cooked rice



Directions:
Directions:
1. Place chicken, cut into 2 inch squares, celery, carrots, and salt into large sauce pan. Add boiling water. Cover. When steaming, reduce heat to simmer and cook until chicken is tender.

2. When chicken is almost tender: Melt butter in skillet, add onion and SLOWLY fry untilonion is golder brown. Add curry powder and flour until well blended.

3. Slowly stir chicken broth into flour mixture. Stir until smoot.

4. Beat egg yolks and blend into cream then blend into sauce.

5. Arrange chicken on outter edge of platter. Pour curry sauce over everything. Serve immediately.


* Make sure butter is not too hot when adding chicken broth.
