2 cups yellow cornmeal
1 tbsp flour
1 tbsp sugar
1 tsp baking powder
¾ tsp baking soda
¼ cup finely chopped onion
1¼ cups buttermilk
1 egg well beaten
Cooking oil for deep frying

Directions:
Directions:
Heat oil to 375º
Mix together in a bowl the cornmeal, flour, sugar, baking powder, baking soda and onion – make a well in center of dry ingredients and add a mixture of buttermilk and egg all at one time – mix until well blended – using about a heaping tbsp for each, form into small cakes – deep fry only as many at one time as will float uncrowded one layer deep in the hot oil – fry for 3 to 4 min or until well browned – turn them with tongs or a fork as they rise to the surface and continue to turn them several time during cooking – remove them from the oil with a slotted spoon holding over the oil for excess oil to drop back into the oil – place them on paper towel to finish draining – serve hot
