1 lb. milk fed veal cutlets, pounded thin
2-3 scallions
Flour
S&P
butter
1/2 lb. mushrooms
1.4 cup chicken stock
1/3 cup dry white wine
1/2 cup heavy cream

Directions:
Directions:
Chop scallions. Brown in butter 2-3 minutes. Remove from pan. Slice and brown mushrooms in butter. Remove from pan.

Dust cutlets with flour, S&P. Brown cutlets and remove from pan. Add chicken stock and wine and reduce by half. Add 1/2 cup heavy cream. Bring to boil. Let simmer 2-3 minutes. Add mushrooms, scallions and veal.
