3 1/2 c. Flour
2 c. Oatmeal
1 c. Brown Sugar
1 Tbsp Baking Powder
1 tsp. Baking Soda
1/2 tsp Salt
1/2 c. Butter
1 1/3 c. Buttermilk
1 egg- beaten
1 c. Dried Apricots (Chopped up nicely)
2 Tbsp. Sugar for top of Scones

Directions:

Preheat Oven to 425º F
1. Grease & Flour Cookie Sheet.
2. Combine dry ingredients.
3. Cut cold butter into flour (with food processor or hands).
4. Combine buttermilk and eggs, and add to dry ingredients until moistened.
5. Fold in apricots.
6. Form into 12 2" balls.
7. Place onto baking sheet, and sprinkle with sugar.
8. Bake for 15 minutes.

Side Note: Can be frozen, thawed, then baked.
