3 lb. beef stew meat
1/3 cup corn oil
salt and pepper
3 cups coarsely chopped onions
1 Tbsp. finely chopped garlic
4 tsp. paprika
1 Tbsp. caraway seeds
1 Tbsp. marjoram
1 cup fresh or canned plum tomatoes
1 Tbsp. tomato paste
1 cup beef broth
4 sweet red peppers

Cut the beef into 1-1.2" cubes
Heat the oil in a large casserole; Add beef and cook, stirring often. When the meat is partly browned, add salt and pepper to taste.

Add the onions and cook until the onions are translucent. Add the garlic and stir. Add the paprika, caraway seeds and marjoram. Cook about 10 minutes.

Add the tomatoes, tomato paste and beef broth. Bring to a boil and cover. Simmer slowly for about one hour. If needed, add more broth as the stew cooks.

Split the peppers in half. Remove the seeds and cores. Cut each pepper half lengthwise into four strips. Scatter the pepper strips on top of the stew and cook for another hour.
