3 eggs
2 cups sugar
1 cup oil
2 cups shredded zucchini
2 teaspoons vanilla
1 can (8.5 ounce) crushed pineapple
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 cup walnuts
teaspoon baking powder
1 teaspoons cinnamon
teaspoon nutmeg

1. Beat eggs. Add sugar, oil, and vanilla. Beat until thick and foamy.

2. Stir in zucchini and pineapple.

3. Combine dry ingredients and nuts in separate bowl.

4. Stir dry ingredients into zucchini mixture.

5. Pour batter into 2 loaf pans. Bake at 350 degrees F for 1 hour.
