6 potatoes
6 carrots
2 # stew meat
sweet onion
1/8 cup sugar
2 heaping T. tapioca
4 cups v-8 juice
salt and pepper.
(rutabaga)
Cover tightly with foil and cook at 325 for 2-3 hours

1-1/2 # Sirloin Steak Tips, cut into one inch pieces
salt and pepper
2 T. vegetable oil
2 T. butter
2 carrots
2 parsnips
1 cup frozen pearly onions thawed
1/4 cup all purpose flour
2 cups low sodium beef. roth
3/4 c. Guinness Draught

Directions:
Directions:
Melt butter in now-empty pot. Add carrots, parsnips, onions, and 1/2 t. salt and cook until browned 6-8 minutes. Stir in flour and cook until golden about 1 minute. Add broth, beer and beef, along wit any accumulated juices, and bring to a boil. Reduce heat to medium low and simmer, covered until beef and vegetables are tender, about 10 minutes. Serve.

Despite not loving Guinness beer while in Dublin, I fell in love with their Guinness Stew. Hearty and often served with some delicious, crusty, coarse, mildly sweet, Irish brown bread. Delicious!
