Pecan Cranberry Biscotti Recipe

1 teaspoon baking powder
2 cups flour
1 cups of sugar
⅛ teaspoon salt
3 large eggs
2 large egg yolks
1 tsp of vanilla
1/4 lb pecans
1 cup dried cranberries

1. Heat oven to 350
2. In mixer blend dry ingredients. In bowl whisk eggs, yolks and vanilla.
3. Add wet ingredients to dry and mix util sticky dough is formed.
4. Mix in chopped pecans and cranberries.
5. Turn dough out onto floured surface, knead and shape into 9x4 logs. Transfer to a baking sheet. Bake 25 to 30 minutes until golden brown.
6. Let cool enough to handle, about 5 minutes. Reduce oven to 275. Slice logs into 1 inch pieces. Return pieces cut side down to baking sheet. Lightly toast in oven, about 15 minutes. Remove and cool.
