Mom's Chili (Elsie) Recipe

2 cans kidney beans, with juice
1 can tomato soup
½ small can tomato paste
2 tbsp. ketchup
1½ lbs. ground beef, browned

Mix all items above and simmer on low heat in frying pan for ½ hour.

Chili powder may be sprinkled on when served, as desired.

GRAMMA ELSIE STORY: Mom made this chili for us often. We almost always had plenty of ground beef on hand. Dad kept a few beef cattle on the farm, and so meat was a staple at the dinner table. Mom served this chili on a plate with a fork. (Oh dear, maybe we shouldn't have put it in the Soup Category!?!)
One interesting event regarding this meal occurred when Billy and I were first married. I prepared this recipe, and he didn't quite know what to make of it. He had "never" eaten chili with a fork and on a plate. And...he was pretty impressed!
His mom was a good cook, but when the kids were little at their house, the chili had lots of beans and liquid and not much meat.
The only thing I added when I first started cooking on my own was onion and a little more chili powder. Mom was allergic to onions and liked things a little bland.
My recollection is that we also had canned beets with Mom's Chili. It just seemed to go well together. (At least for our family).

The photo of Annette is one of my favorites. It was taken in 1960 (as states on the back of the picture), so that made her about 3 years old. What a cutie!!
