cup fresh bread crumbs
cup yellow cornmeal
tsp paprika
tsp thyme
tsp grated lemon zest
tsp salt
⅛ tsp pepper
4 cod scrod haddock fillets fresh or frozen thawed
1 egg beaten
lemon wedges for garnish

Directions:
Directions:
Heat oven to 475 with rack on lowest level. Spary cookie sheet with oil. Combine bread crumbs cornmeal paprika thyme lemon zest salt and pepper on a plate. Dip each fillet in egg then in bread crumb mixture. Place fillets on cookie sheet. Bake 7 minutes, turn and bake 5 more minutes.
