2 lbs Lean Beef (top round or sirloin)

Cut beef into 1-inch cubes and set aside.

Mix beef cubes with one (1) cup of spice paste in non-reactive bowl and marinate, covered, in refrigerator for 24 hours.

Preheat grill. Thread beef cubes onto bamboo skewers which have been soaked in cold water for 10 minutes. Grill beef over high heat, turning as necessary, until cooked. About 4-6 minutes. Serve with Indonesian Peanut Sauce
 

Spice Paste

10 Shallots, peeled and chopped
6 Cloves Garlic, chopped
1 4-inch piece Fresh Gingerroot, peeled and chopped
1 Sweet Red Pepper, cored, seeded, and chopped
2-8 Hot Chile Peppers, finely chopped
10 Macadamia Nuts
1 T Coriander Seed
1 T Black Peppercorns
1/4 c Brown Sugar, packed
¼ c Oil
2 Bay Leaves

Place shallots, garlic, ginger, red pepper, chili peppers, nuts, coriander, peppercorns, and brown sugar in a food processor or blender. Puree until a smooth paste forms.

Heat oil until very hot in wok or large pan over medium heat. Add spice paste and bay leaves. Saute, stirring often for about five (5) minutes, or until mixture turns golden brown. Cool mixture to room temperature and remove bay leaves.
 

Indonesian Peanut Sauce

1 c Chunky Peanut Butter
3 Cloves Garlic, chopped
2-5 Hot Chile Peppers, chopped
1 2-inch piece Fresh Gingerrot, peeled and chopped
3 T Brown Sugar
4 c Unsweetened Coconut Milk
2-3 T Soy Sauce, or to taste
1 T Molasses
2 tsp Fresh Lime Juice, or to taste

Puree peanut butter, garlic, chile peppers, gingerrott, and brown sugar in food processor or blender. Transfer mixture to heavy saucepan. Stir in the coconut milk, soy sauce, lime juice, and molasses. Gently simmer, uncovered, until think and full flavored, about 30 minutes, stirring often.

Let sauce cool to room temperature before serving. Correct seasonings adding soy sauce or lime juice to taste. (5 cups)
