3 medium russet potatoes
6 egg yolks, beaten
1 T olive oil
salt to taste
6 cups flour
9 oz. tepid water (save from boiling potatoes)

Directions:
Directions:
Boil potatoes with skins left on. Drain potatoes, reserving 9 oz of water. Let potatoes and water cool. Peel potatoes and put potatoes through ricer.

Mix all ingredients together and knead. Dough should not be sticky. Add additional flour if needed. Pull small amounts of dough and roll into ropes about 1/2 inch thick. Cut ropes into small pieces about 1/2 to 3/4 inch long. Place pieces on cookie sheet and freeze. Once they are frozen you can store in freezer in ziploc bags or containers.

When you need gnocchi, place frozen gnocchi into boiling water and cook until done.

This is Grandma Ciancanelli's recipe. After cutting the ropes into several pieces, grandma would then roll a fork over the pieces to give them a ridged look, and then freeze them. If you're making these for immediate use, you can go straight from cutting the pieces into the boiling water, no need to freeze first.
