1 16oz container cottage cheese (you can use low fat)
1 10 oz pkg frozen chopped spinach, thawed, well drained
1 cup mozzarella cheese, divided
1/4 cup grated Parmesan cheese
1 tsp Italian seasoning
20 jumbo pasta shells, cooked and drained
1 26 oz jar spaghetti sauce
1 large tomato, chopped

Directions:

Preheat oven to 400º
Spray foil with cooking spray before covering shells

1) Mix cottage cheese, spinach, 1/2 cup mozzarella cheese, Parmesan cheese and Italian seasoning until well blended.
2) Spoon 1 heaping tbsp of cheese mixture into each pasta shell.
3) Combine spaghetti sauce and tomatoes; spoon half of the sauce mixture into 9x13 in baking dish.
4) Place shells, filled sides up, in baking dish.
5) Spoon remaining sauce mixture over shells. Cover with foil.
6) Bake 25 minutes covered. Uncover and top with remaining 1/2 cup of mozzarella cheese.
7 Bake uncovered until cheese is melted.
