The Jamaican spicy and sassy seasoning
1 tbsp Instant minced onion
2 tsp of dried Basil
1 tsp ground all spice
1 tsp ground pepper
1/2 tsp ground cinamon
1/4 tsp ground red pepper (cayenne)
1/2 tsp of salt
mix all ingrediants into a bowl
Rub over chicken
directions for chicken
3 to 3 1/2 pound broiler fried chicken
2 tblspoons vegetable oil
3 medium potatoes cut length wise

1. Prepare the seasoning
heat the oven 375 line roasting pan with aluminium foil

place chicken, breast side up on rack in roasting pan. Brush 1 tsp of oil over chicken. Rub 2 tbsp of seasoning mix into chicken skin.

insert meat thermometer in chicken so tip is in the thickest part inside the thigh muscle and does not touch bone

Brush the rest of the the oil 1 tbsp over potatoes. Sprinkle with remaining seasoning mix. Place potatoes on the rack around the chicken.
Roast uncovered to 1 hour until potatoes are tender, thermometer reads 180 degrees and juice of chicken is no longer pink when center of thigh is cut.
Let chicken stand for 15 minutes for easier carving
