⅓ cup butter
⅓ cup of flour
⅓ cup chopped onion
½ teaspoon of salt
¼ teaspoon of pepper
⅔ cup of milk
1 and ¾ cup chicken broth
2 cups of cooked chicken, cut up
1 cup of peas
1 cup of cooked carrots
1 cup of cooked potatoes diced

Directions:
Directions:
1. Saute onions in a little oil or butter and set aside.
2. Melt butter over low heat and whisk in flour. Cook, stirring constantly until smooth and bubbling for about 3 -4 minutes.
3. Stir in broth and and milk, heat until bubbling, stirring constantly.
4. Stir in chicken, vegetables, and onion.
5. Line a 9 inch pie plate with pastry, fill and top with remaining pastry.
6. Bake at 425º for 30 -35 minutes.

You can also use a dumpling topping. Combine 1 cup of Bisquick, 1/4 cup of melted butter and 3/4 cup of milk and spread over the chicken mixture.
