1 lb boneless skinless chicken breasts
4 oz Pepper Jack cheese, shredded
1 cup frozen spinach, thawed and drained
2 Tbsp oil
1 tsp cajun seasoning
1 Tbsp bread crumbs
salt and pepper to taste
toothpicks

Directions:
Directions:
Heat oven to 350º, flatten chicken to ¼". Combine cajun seasoning with bread crumbs, spinach, cheese, salt and pepper. Put ¼ cup of mixture on each breast. Roll up each breast and hold with a toothpick. Brush each breast with oil, sprinkle extra bread crumbs on top of each breast. Bake 35-40 minutes.
