4 Tbsp butter
2 Tbsp flour
1 tsp salt
1/2 tsp pepper
2 C milk
2 1/2 C fish
1 C grated cheese

Directions:
Preheat oven to 350º

Partially cook the fish till set. Remove bones. Make a paste with the first 4 ingredients. Add milk, cook til thickened stirring constantly. Grease 2 qrt casserole, pour a little sauce in the bottom, add a layer of fish, sprinkle cheese, Repeat layers ending with cheese. Bake for 30 minutes

You can do this with salt cod too. Mom and dad had friends (Lee and Arlene and John and Jenn) from Harbor Greens - the condo complex in Seminole Florida - visit one summer and on our travels around golfing Lee was checking out cod au gratin wherever he could. One of his favourites was made with salt cod but I can't remember where it was!
