Directions:Brownies 1. Preheat oven to 350 degrees. Grease and flour 9X13 baking pan or line pan and sides with parchment paper or foil (if foil, spray with non stick spray) 2. coarsely chop bars of chocolate. microwave chocolate and butter in a large microwaveable bowl for 1-2 minutes or until butter is melted. remove from microwave and stir chocolate and butter together till chocolate is completely melted. add sugar to mixture, blend well. Add eggs and vanilla, blend well. add flour, baking powder and salt. mix till blended. the batter will be fairly thick. 3. spread batter evenly in prepared pan and bake for 35-38 minutes or until top middle of brownies is set and a toothpick inserted in the center comes out almost clean (it will not come out completely clean because of the chocolate in the batter). Cool brownies completely before adding frosting.
Topping While Brownies are baking, in a medium saucepan stir together the egg yolks, sugar, butter, vanilla and evaporated milk (I put butter in saucepan first to melt it then add sugar then the rest of the ingredients). Cook this mixture over medium heat for about 15 minutes, stirring constantly, until thick and bubbly. Remove from heat and stir in the coconut and pecans. Stir well. Let mixture cool for at least 30 minutes, then give a final stirring before spreading it evenly over completely cooled brownies. I then put brownies in the refrigerator until completely cool, then remove from pan by lifting foil/parchment. This makes it much easier to remove from the pan and cut into pieces. |
