2 medium cucumbers, peeled and coarsely chopped
5 medium-sized tomatoes, peeled and coarsely chopped
1 large onion, coarsely chopped
1 medium green pepper, deribbed, seeded and coarsely choppped
2 tsp. finely chopped garlic
4 cups coarsely crumbled French or Italian bread, trimmed of crusts
4 cups cold water
1/4 cup red wine vinegar
4 tsp. salt
4 Tbsp. olive oil
1 Tbsp. tomato paste

Directions:
Directions:
Combine cucumbers, tomatoes, onion, green pepper, garlic and bread in large bowl.
Stir in water, vinegar and salt. Blend in Cuisinart in batches at high speed for 1 minute or until reduced to a smooth puree.
Beat in olive oil and tomato paste.
Cover and refrigerate for at least 2 hours.

Garnish with 1 cup of crumbled bread, 1/2 cup onions finely chopped, 1/2 cup cucumbers, peeled and finely chopped and 1/2 cup finely chopped green peppers.
