1 1/4 cups graham cracker crumbs- 9 full ones
2 Tablespoons sugar
3 Tablespoons melted butter

3 8-oz packages cream cheese
1 cup sugar
2 teaspoons grated lemon peel
1/4 teaspoon vanilla

Directions:
Directions:
Mix graham cracker crumbs and sugar. Add melted butter. Press into bottom of 9 inch springform pan. Bake 10 minutes at 350 and remove from oven. Reduce oven temp to 300.

Beat softened cream cheese. Gradually add sugar. Beat until fluffy. Add lemon peel and vanilla. Beat in eggs 1 at a time. Pour over crumb base. Bake 1 hour or until center is firm. Cool to room temp and add any topping you wish.
