3/4 cup shortening(part butter or margarine)
1 cup sugar
2 eggs
1 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1 tsp salt

Directions:
Directions:
Mix thoroughly shortening, sugar, eggs and vanilla. Blend in flour, baking powder and salt.
Heat oven to 400º. Roll dough on lightly floured counter. Cut into desired shapes. Place on ungreased baking sheet. At this point you can sprinkle with sugar. Only if you are not icing the cookies after they are baked. Bake 6 to 8 minutes or until light brown.

Icing optional; 1 1/2 cups of icing sugar and egg white from one egg. Mix well it will be a bit runny. Use one drop of food coloring and ice with back of spoon.
