4 lbs apples
2 C apple cider or 1 C cider vinegar and 1 C water
sugar
1/8 tsp salt
2 tsp cinnamon
1 tsp cloves
1/2 tsp allspice
grated rind and juice of 1 lemon

Directions:
Wash apples - do not peel. Core and remove seeds. Cut in eighths. Combine apples and cider, bring to a boil. Cover and boil gently til very soft - about 20 minutes. Press through sieve. Measure apple puree into a large saucepan. Add 1/2 C sugar for each C puree. Add salt, spices, lemon rind and juice. Cook over low heat, stirring constantly until sugar dissolves, Increase heat to moderate and boil gently. Stir occasionally til thick, smooth and dark coloured, about 1 hour. Seal in sterilized jars

First time we had apple butter was at the Kapok Tree Inn in Clearwater Florida in the 70's. Beautiful large restaurant with great steaks. They would give you muffins and apple butter while you waited for your meal to be prepared. Loved the apple butter so much Mom tracked down the recipe and would make a batch every now and then.
