Ingredients:  
1 container (16 ounces) cottage cheese
1 1/2 cups (about 6 ounces) shredded Parmesan cheese
2 packages (10 ounces each frozen chopped spinach, well drained
2 eggs separated
1/4 cup butter, melted
2 tablespoons minced onion
2 Tablespoons flour
1/2 teaspoon baking powder
1/2 teaspoon pepper

Directions:
Directions:
1. Preheat oven to 350 degrees.
2. In a medium bowl, combine cottage cheese, Parmesan cheese, spinach, egg yolks, melted butter and onion.
3. In a small bowl, combine flour, baking powder,and pepper.
4. Add dry ingredients to spinach mixture; stir until well blended.
5. In a small bowl, beat egg whites until still; fold into spinach mixture.
6. Pour into a greased 2 quart souffle dish.
7. Bake uncovered 50 to 60 minutes or until center is set. Serve warm.
