Coq au Vin Recipe

3 Tbsp Olive oil or butter
4+ slices bacon, minced 1 inch
6 tiny onions or 1 large onion
2-6 sliced carrots
4 green onions, chopped
3 peeled diced garlic cloves

3 Tbsp flour
12 Chicken thighs

3 Tbsp Parsley, minced
1 Tbsp Chervil
1 Bay Leaf
1/2 tsp Thyme
1 tsp Salt
1 can/box chicken broth
1/8 tsp fresh ground pepper

1 cups dry red or white wine
lb white mushrooms

Melt butter or olive oil. Add and brown moderately the bacon-garlic. Remove from pan and brown chicken in the remaining juices. Add and stir in the flour. Add remaining ingredients. Simmer for 1 hour covered. Last 5 minutes add mushrooms. Skim before serving.
