1 lb Ground Pork Breakfast Sausage
1 lb Ground Hot Pork Breakfast Sausage
1 (30oz) bag Frozen O'Brien with Onion & Peppers
1 tsp Salt
tsp Black Pepper
1 c Shredded Cheddar
6 Large Eggs
2 c Milk (skim is fine)

Preheat oven to 350F.

Cook sausage over medium-high heat, stirring until it crumbles and is no longer pink. Drain well.

Prepare potatoes according to package directions using tsp salt and tsp black pepper.

Stir together potatoes, sausage, and cheese. Pour into lightly greased 9x13 inch casserole dish.

Whisk eggs, milk, and remaining tsp of salt (use less, if desired). Pour over potato mixture.

Bake at 350F for 35-40, or until cooked through.
