1/2 pound dried Great Northern Beans
1 pound boneless, skinless chicken breasts
1/2 onion, chopped fine
3 cups chicken broth
1 Tbsp chopped jalapeno pepper (optional)
1 tsp ground cumin
1/2 tsp ground oregano
1/2 tsp garlic powder
Salt & Pepper to taste
Shredded Mexican cheese blend

Directions:
Directions:
1. Place Great Northern beans into a large container and cover with cool water. Let stand overnight. Drain and rinse beans.
2. Place beans, chicken, onion, jalapeno pepper, broth and all spices in slow cooker.
3. Cook on High for 4-6 hours or low for 8 hours. Shred chicken with a fork and mix back into chili.
4. Serve with shredded Mexican cheese.
