2 C. sugar
2 T. cornmeal
Dash of salt
3 eggs, slightly beaten
¼ C butter, softened
5 T buttermilk
1 tsp. vanilla
1 pie shell, unbaked

Directions:
Directions:
Combine dry ingredients. Add eggs, butter, buttermilk, and vanilla and mix well. Pour into pie shell.
Bake @ 300º for 1 hour or until firm when shaken. (Mimi baked this @ 400º for 10 minutes and then turned it down to 350º for the rest of the baking time). You may have to cover very loosely with foil the last few minutes
