10" pie shell, baked
⅓ cup peanut butter
⅔ cup sifted confectioners sugar
3 egg yolks
½ cup sugar
5 T. flour
⅛ tsp. salt
2 cups milk, scalded
2 T. oleo
1 tsp. vanilla
2 T. chopped peanuts
3 egg whites
6 T. sugar

Directions:
Preheat oven very hot to 500º. Scald milk. Cool. Mix peanut butter and powdered sugar until pea-sized balls form. Sprinkle in bottom of pie crust. Combine egg yolks, sugar, flour and salt. Then combine cooled milk and egg mixture in top of double boiler. Cook over boiling water until thick. Stir all the time. Add oleo and vanilla. Pour into pie shell over peanut butter mixture.
Meringue:
Make meringue – use metal or glass bowl. Don’t completely beat.
Add six regular tablespoons of sugar.
Beat egg whites until stiff
Place pie in the oven, turn oven off.
Leave in the oven until the meringue is brown.
If egg whites weep, probably too much sugar.



Top with meringue. Add peanuts and brown in oven.
