1 chicken 4-6 pounds
2 medium onions chopped
1 ½ cups diced celery
1 ½ cup diced potato
2-3 Tablespoons olive oil
2 cups sliced carrots
Garlic salt, ¼tsp cayenne
2 T black pepper
1 Tablespoon dried thyme
1 Tablespoon dried marjoram
¼ c rice
Chicken broth 2-4 cans or equivalent of boxed

Removed any innards packaged within the chicken. In a large pot, cover the chicken with enough water to cover the bird. Bring to a boil, than lower heat to simmer, 1-2 hours.

Swirl enough olive oil in the bottom of a second large pot to cover (this will be the final soup pot so should hold 10-12 cups). Add onions and celery, cook over medium low heat till onions are translucent. Turn off.

Strain Chicken, keeping broth in the big pot. Cool to handle. Debone, adding meat to broth.


Bring all to boil, simmer. Add herbs, garlic salt, cayenne pepper and additional broth as needed. Add rice, potatoes, and carrots. Simmer 20 min, adjust seasonings, broth ratio.
Mine = about 2:1 broth to stuff.
