⅓ cup butter
⅔ cup sugar
2 eggs
⅔ cup water
1 ½ cups flour
3 tsps. baking powder
⅓ tsp. salt
½ tsp. vanilla

Directions:
Directions:
Cream butter, add sugar, beaten egg yolks and vanilla. Sift flour, baking powder, salt, and add to first mixture alternately with water. Fold in stiffly beaten egg whites.

Melt ¼ cup butter in 8" square cake pan. Stir in ⅔ cup brown sugar. Over this arrange 9 slices pineapple with a maraschino cherry in center of each slice.

Pour cake batter over pineapple slices.

Bake at 350 degrees for 35 minutes.

My mother, Margaret Eade, was an excellent cake baker. She won many prizes at the Washington County Fairs over the years, but recipes for those cakes cannot be found. Friends and neighbors remember those delicious cakes that she baked and took to birthday celebrations and other meal time gatherings. In December of 1994 I met a long-time neighbor of mother's who identified herself to me in the grocery store and recalled her appreciation of the delicious cakes that Mother always brought to the birthday celebrations.

I was caused to reflect upon just how often individual contributions are lost just because we fail to record them. This collection of recipes is presented, in part, to prevent that from happening with some of the foods that our family has enjoyed.
