½ cup dry breadcrumbs
3 tbsp whole milk
1 large egg, lightly beaten
½ cup grated yellow onion
3 tbsp grated Parmesan cheese
1 tbsp red wine vinegar
½ tsp kosher salt
½ tsp pepper
1 lb ground turkey
1½ tbsp olive oil
1 (24 oz) jar lower sodium marinara sauce
6 oz fresh baby spinach (6 cups)
3 oz shredded low moisture part skim mozzarella cheese (¾ cup)
2 tbsp fresh basil

Directions:

Stir together breadcrumbs and milk in a large bowl; soak 5 minutes. Add egg, onion, Parmesan, vinegar, salt and pepper. Stir to combine. Add turkey, stirring gently until just combined. Using your hands, gently shape mixture into 16 - 1½ balls.

Heat oil over medium-high heat. Add meatballs, cook, tuning often, until browned on all sides- about 8-10 minutes. Transfer to a plate. Reduce heat under skillet to medium-low; add marinara and spinach. Increase heat to medium, and bring to a simmer. Simmer until spinach just begins to wilt, 2-3 minutes. Return meatballs to sauce in skillet, sprinkle with mozzarella. Cover and cook until meatballs are cooked through, 4-6 minutes. Sprinkle with basil and serve immediately.
