For Slaw:
½ small head of cabbage, shredded
2 carrot, grated
2 celery ribs, chopped

Variations: can add green pepper, onion, apple, pineapple (all shredded, grated, or chopped) to the mixture, to taste. When using fruit, increase the amount of sugar in the dressing.

For Dressing:
⅛ cup lemon juice
½ cup mayonnaise
¼ to ½ cup sugar
⅛ tsp. paprika
½ tsp. celery seed

Add all shredded vegetables (and fruit, if desired) to bowl. In a separate bowl, combine all dressing ingredients and whisk until smooth. Adding dressing to slaw and mix thoroughly. Cover and chill in refrigerator for at least one hour.
