1 box yellow cake mix, sifted
½ cup applesauce
4 eggs, unbeaten
1 tsp. salt
1 T. orange extract (or any other flavoring)
2 cups cut up dates
4 slices candied pineapple, cup up
½ pound candied cherries, cut up
1 can angel flake coconut
2 cups chopped nuts
1 cup sifted plain flour

Directions:

Grease pan. Line pan with foil, and spray or grease again. Empty cake mix into mixing bowl. Add applesauce, eggs, salt and extract. Beat four minutes until smooth and creamy.
Dredge fruit, coconut and nuts with flour in separate extra large bowl. Pour batter over all and mix well with large spoon or your hand.
Bake very slow, 250º, three hours or until done. Let cool a little in pan before removing.
