2-4 cups cooked chicken, chopped into bite-size pieces
1 cup seedless grapes, halved (red or green)
1 cup pecans, chopped (can also use thinly sliced almonds)
3-4 celery ribs, chopped
3 scallions, thinly sliced
2 Tbsp. fresh dill, chopped
1 Tbsp, fresh parsley, chopped
1 cup mayonnaise
Juice of 1 small lemon
1 Tbsp. Dijon mustard
½ to 1 tsp salt, to taste
Freshly ground pepper, to taste

In a large bowl, mix together chopped chicken, grapes, pecans (or almonds), celery, scallions, dill, and parsley. In a small bowl, mix together mayonnaise, lemon, mustard, salt, and pepper. Add the mayonnaise/mustard mixture to the chicken mixture and gently stir until well mixed. Cover and refrigerate for at least an hour.
