Ingredients: INSTANT POT Carnitas 3 lbs pork shoulder butt cut into cubes 1 medium onion, diced 6 cloves garlic, peeled and smashed 3/4 cup free squeezed orange juice 1/4 cup squeezed lime juice 1 Tbsp. cumin 1 Tbsp. chili powder 2 tsp. oregano 2 tsp salt 1 tsp chipotle powder
NACHOS 2 cups plantain chips 1 cup queso blanco 2 cups carnitas GUACAMOLE 2 avocados , diced 1/4 cup red onion , chopped 2 tablespoons fresh cilantro , chopped 1/2 lime , juice of salt , to taste PICO DE GALLO 2 fresh Roma tomatoes , chopped 2 tablespoons red onion , chopped 2 tablespoon fresh cilantro , chopped 1/2 lime , juice of 1/4 fresh jalapeno , minced salt , to taste CREAMY CHIPOTLE SAUCE 2 chipotle pepper in adobo sauce 2 teaspoons adobo sauce 1/4 cup mayonnaise 1 clove garlic , peeled squeeze of fresh lime juice salt , to taste TOPPINGS smoky guajillo salsa , see recipe in notes restaurant-style salsa , see recipe in notes GARNISHES black olives, sliced fresh green onion, chopped fresh cilantro , chopped

Directions:Cut pork into cubes and set aside. Prep onion and garlic as noted. Combine orange juice, lime juice, chili powder, oregano, salt, and chipotle powder in bowl and mix well. Press saute button on the instant pot and add olive oil. Once hot, add in te pork and brown on all sides. Cancel instant pot saute once browned. Pour in the jujce, seasonings, and add onions and garlic. Secure the lid of the instant pot and close the pressure valve. Press manual button for pressure cook and set the time to cook for 30minutes on high pressure. When the time is up, let the pressure naturally release on its own for 20 minutes.
Make the creamy chipotle sauce. In my case, I used purchased guacamole, and restaurant fresh salsa from our local Mexican grocer. I didn't use the queso, but simply used purchased plantain chips, shredded pork, onions, tomatoes, black olives, homemade salsa, chipotle sauce, and quacamole.

Notes: These were fantastic. I think the real best part was the plantain chip. A few disclosures...I am not a purist. So, I use purchased quacamole and restaurant salsa. And plantain chips. I put the toppings on regular chips for my husband, and added some cheese. This was a fantastic meal, popping with limy salty goodness and the pork carnitas were out of this world yummy, and leftovers could be used in tacos, breakfast burritos, you name it. And EASYYYYY. My kind of meal!
