2 quarts maple syrup
2 to 2½ lbs honey
1 tsp acid blend
1 pkg Champagne yeast

Directions:
Directions:
Bring maple syrup and honey to boil with 2 quarts water, add acid blend. Skim foam off, cool. Add 1 gallon water, proof yeast until very active, add to cooled sweet water blend. Siphon off to another container after 1 week, keep liquid level to top of jugs, use more water as needed, bottle when clear, seal bottles.
