¼ cup melted butter
1 cup crushed Ritz crackers
3 whole chicken breasts cooked and diced (can use rotisserie)
8 oz sour cream
1 can cream of chicken soup
¼ cup chicken broth
salt and pepper
2 cups instant white rice cooked

Directions:
Directions:
1. Spoon ½ crumbs into 2 quart casserole dish. Top with half of melted butter.

2. Place chicken on top of crumbs.

3. Combine sour cream, soup, broth, salt and pepper and rice. Spoon over chicken and stir,

4. Top with remaining crumbs and butter.

5. Bake 350º for 25 minutes.
