2 tbsp. garlic, minced
2 tbsp. fresh ginger, minced
1/4 cup shredded carrots
2 green onions, chopped
1/2 red bell pepper, chopped
1/4 cup mushrooms (shitake or button), chopped
1 tbsp canola oil
1 lb ground beef or turkey
1-2 bunches of romaine lettuce
1 cup Thai Chili Taco Simmer Sauce or preferred simmer sauce

Directions:

Heat oil in a large skillet over medium-high heat.
Add ground meat to the pan and break up larger pieces using a spatula.
Cook 5-8 minutes until no pink remains.
Add veggies, garlic, and ginger to the pan.
Sauté 3-4 minutes until veggies are softened.
Add Thai Chili Taco Sauce, stir, and reduce heat to medium, simmer for 5 minutes.
To serve, spoon mixture into iceberg leaves.
