Tsourekia- Easter Recipe

3 sticks butter, melted
2 cups milk, warm
8 eggs, beaten
1 cup orange juice, room temperature
3 cups sugar
2 Tbsp canola oil
4 Tbsp yeast
½ tsp cinnamon
½ tsp Mastics ( powder or little balls that you crush)
½ tsp maxlepi- ( powder or little balls that you crush)

1. Preheat oven 350º

2. Boil stick of cinnamon, 2 bay leaf and 1 Tbsp Anise seeds in 2.5 cups water for 15 min

3. In the above warm water, put yeast and 1 Tbsp sugar, let foam about 20-25 minutes

4. In small sauce pan
Add butter, sugar, and milk
On VERY low heat, stir until melted and sugar dissolved
Remove from heat
Leave at room temp

4. In mixer,
Add butter mixture
Add beaten eggs & orange juice
Add yeast/water mixture
Add flour with cinnamon, mastics, maxlepi. Add enough flour so that its not a liquid
Keep mixing

5. Transfer to large bowl and mix by hands- will need about 8 lbs of flour
Mix until dough not sticky
Pour oil on top
Punch holes with fingers
Cover with wax paper & clean kitchen towel and let double in size. Punch down after about 1 hour and
then let rise again

6. Braid into loafs
Put in red eggs
Cover again and let raise

7. Brush with egg & small amount of water whisked together and then bake
For about 30-40, until its browned.

8. Place on rack
When no longer hot but still warm, cover with kitchen towel ( helps soften crust)
When no longer warm, place in plastic bag

To make ~ 3 medium size loafs:

Make the flavored water as above but will only use 1 cup of finished product
4 tsp of dry yeast ( with 1 tsp of sugar)
1 stick of butter at room temperature
1/2 cup of milk at room temperature
3/4 cup of sugar
3 eggs at room temperature
1/4 cup orange juice at room temperature
1/4 tsp mastixa
1 tsp mahleb
About 6-7 cups of flour
1 Tbsp vegetable oil

Can let the dough rise in the oven while the oven is OFF
