4 Tbsp unsalted butter
1 minced onion
1 tsp black pepper
¼ cup flour
2 ¼ lbs fresh spinach
4 oz. cream cheese
3 garlic cloves, minced
4 tsp salt, divided
½ tsp nutmeg
3 ½ cups half and half
1 cup mozzarella
½ cup grated parmesan cheese

Directions:
Directions:
Cook/ boil spinach with 2 tsp salt about 1 minute then drain. Rinse with cool water until cool enough to squeeze the water out and chop. In a large skillet, melt butter with onion and saute 8-10 minutes then add garlic and cook 2 additional minuter. Add salt, pepper, and nutmeg. Add flour and brown. Add Half and Half and cook till boiling. Add cheeses(mozzarella and cream cheese) and cook until thick. Add Parmesan cheese then stir in spinach.
