Butterscotch Oatmeal Cookies Recipe

cup butter, softened (not melted)
cup white sugar
cup brown sugar, packed
2 eggs
1 tsp vanilla extract
1 cups all-purpose flour
1 tsp baking soda
tsp ground cinnamon
tsp salt
3 cups rolled oats
1 ⅔ cups butterscotch chips

Step 1 - Preheat oven to 375 F

Step 2 - In a large bowl, beat butter, white sugar, and brown sugar together. Add the eggs and vanilla. Beat well.

Step 3 - Stir together the flour, baking soda, cinnamon, and salt. Gradually add the four mixture to the butter mixture and stir until blended. Stir in the oats and butterscotch chips.

Step 4 - Drop by teaspoonfuls onto an ungreased cookie sheet. (I prefer to use parchment sheets on the cookie sheet)

Step 5 - Bake for 8 to 10 minutes in the preheated oven and until the edges begin to brown. Store in an airtight container.
