Whole Octopus
1 onion
4 garlic cloves
1 Tbsp peppercorns
2 bay leaves
⅓ cup red wine vinegar

Directions:
Directions:
1. In large pot
Add octopus, onion, garlic, peppercorns, bay leaves, red wine vinegar
Let boil until all water is evaporated ( octopus own water)
Check to see if soft, if not add more water until soft
Can take 1.5-2 hours for octopus to get soft

2. Once cooked
Take octopus out, cut into pieces
Take out onion and bay leaf
Put octopus pieces back in pan
Add 2-3 Tbsp EVOO
Cook for 5 min
Add salt if needed
